Puff Pastry Cheese Sticks

Remember the pastries I made a few weeks back? With the saved scraps from that batch, I made these easy peasy cheesy sticks to go with dinner. Of course, they are delicious enough to eat as a snack as well.

Ingredients
Puff pastry scraps
1/4 cup of freshly grated parmiggiano, or any hard, salty, cheese
a pinch of salt
  1. Preheat the oven to 350F, or 400F according to the package instructions.
  2. Thaw the dough until it's malleable, but still cold and stiff. You don't want it room temperature, because the dough will turn into mush.
  3. Place the ball in between two pieces of parchment or wax paper and roll out into a square or disk. Don't have a rolling pin handy? Do as I did, and take the bottom of a heavy pan and smoosh out the dough until it's even.
  4. Peel off one side of the parchment paper and sprinkle with parmiggiano and salt. Optional: You can also sprinkle with some fresh ground black pepper as well.
  5. Cut the dough into strips and lift away from parchment.
  6. Twist the dough and place on a baking sheet lined with a new sheet of parchment paper. Smoosh the ends of the sticks onto the parchment, to help the sticks keep their shape and prevent shrinkage during baking.
  7. Bake for 12 - 15 minutes, until golden brown.
