Lunch without Buzza

My friends often ask me what I eat when I'm alone. 'You can't possibly eat like that all the time!'

True. A girl has got to save her waistline now and then. And let's face it. I'm lazy and really don't have to impress myself. So, when I have the chance to eat a meal alone, I usually do something easy, un-meat centric and doesn't require a trip to the store. This sandwich contains most of my favorite ingredients.

Ingredients
1/2 heirloom tomatoes, sliced
1/2 avocado, diced
2 egg whites
1 slice of cheese (I used Jarlsberg)
coarse sea salt
fresh ground black pepper
Optional: basil olive oil
2 slices of bread, toasted (I used honey wheat)
  1. Cook egg whites into an omelet.
  2. Prep all ingredients, sprinkling each with a bit of salt and pepper along the way. This gives each ingredient lots of flavor and nixes the need for a sauce, like mustard or mayo...gross!
  3. One one piece of toast, spread the avocado, sprinkle salt & pepper.
  4. Then layer tomatoes, sprinkle salt & pepper.
  5. On the other piece, lay the cheese while it's still warm. Then layer eggs. This will help to melt the cheese.
  6. On the egg, drizzle the basil olive oil.
  7. Slice and eat.
